What is kefir?

Kefir, is a fermented drink that is prepared from kefir grains, a specific type of probiotic culture. Kefir originated from parts of Eastern Europe and Southwest Asia. The name derives from the Turkish word “keyif“, which means “feeling good” after eating.

We can make kefir by adding kefir grains into milk (Cow/sheep). Kefir grains are nothing but colonies of yeast and lactic acid bacteria that resemble a cauliflower in appearance. Over approximately 24 hours, the microorganisms in the kefir grains multiply and ferment the sugars in the milk, turning it into kefir. The grains’ lactic acid bacteria turn the milk’s lactose into lactic acid. After 24 hours (hours of fermentation can vary depending on the temperature; We will guide you on this once you place your order), remove the grains from the liquid and use them for next batch of fermentation. In other words, kefir is the drink, and kefir grains are the starter culture that you use to produce the beverage.
